লাউ - ছেঁচকি (Lau Chechki)
A simple, comforting Bengali side dish, Lau Chechki features tender bottle gourd (lau/doodhi) finely diced and cooked with minimal spices.1 The flavor is derived from a light tempering of Kalojire (Nigella seeds) and green chilies. Its natural sweetness and soft texture make it a perfect, light accompaniment to rice or roti.
